Talk to Me

After reading a recent post by Lindsay in which she asked her readers how they preferred to be contacted, I got to thinking that maybe I should do the same. Many of you may not know it, but I respond to each of your comments individually in the comments section of each post. I do this because I want to emphasize how much I appreciate each and every comment/question I receive. However, I fear that many of you never even see my responses. SO...I want to know: how would you prefer I respond to your comments? Should I continue leaving mammoth response comments in my posts, or would you prefer that I send you an e-mail? If it's the latter, you'll have to be sure to leave me your e-mail address.

Now, with all logistics aside, I have some fun dishes to share with you today. I am loving all this leisure time to cook as I please!

Monday
After being prompted to choose my absolute favorite Spirutein flavor by my friend K, I bestowed the honor on the Blueberries N Cream flavor. Accordingly, I made a smoothie with it that night: blueberries, said Spirutein, and soymilk topped with TRUWhip (a natural alternative to Cool Whip), and cashew ginger granola. Dee-lish. I think I have outgrown my liking for whipped topping though--I much prefer the crunch of granola these days.
Tuesday
After a very sweaty run outside in ~80* temperatures, I needed a cool and refreshing breakfast...so I had a breakfast parfait. This one featured Graham Bumpers, Cherry Almond Butter (from VeggieGirl!), dried cherries, and Greek yogurt. I cannot wait for cherry season!
For lunch I wanted another excuse to use my hand blender, so I decided on a soup recipe from Totally Vegetarian, Creamy Cauliflower Soup. The name of the dish is a slight misnomer,as there is no milk or soymilk in the recipe--the creaminess comes from the blended potato! This was a super simple recipe and delicious to boot. I enjoyed it with the rest of my pumpkin hummus, raw veggies, and a few clementines. Perf.
Although I don't normally include pics of my snacks, I thought this one was blog-worthy: Rachel's Cucumber Dill Cottage Cheese. I picked it up at WF the other day on a whim, and I am SO glad that I did. Its flavor was quite reminiscent of tsasiki dip, one of my favorite condiments these days. For those of you counting your sugar grams (Jenn!), these have 75% less sugar than conventionally sweetened yogurts.
I whipped up another dish from Totally Vegetarian for dinner: Pasta with Red Onion, Radicchio, Fakin' Bacon, and Edamame. I love all the colors in this meal! The green and purples are quite eye-catching, no? Unfortunately, this dish didn't have enough flavor for me. Next time I might add some pesto or something. That's a dish of peaches and a salad with Woodstock dressing on the accompanying plate.
Yesterday afternoon, I received a Facebook message from VeggieGirl with a suggestion for a shake recipe. After saving it in my recipe file, I decided to try something similar for my evening treat (I didn't have all the ingredients on hand, so I was unable to follow the recipe exactly). I blended strawberries, soymilk, unsweetened vanilla Spirutein, and a couple spoonfuls of PB2. Fabulous! I really recommend the PB-strawberry combo. As soon as I get some hemp milk and vanilla rice powder, I'll try VG's precise recipe:)
Wednesday
After much indecision over what to have for breakfast, I remembered Jenn's recipe for PB2 icing. I topped my toast with a good dose of the icing and served it with a combo of Greek yogurt, pumpkin, and almonds, plus a few clementines on the side.
My lunch today was again inspired by an Everyday Dish podcast. I made the Ginger Peanut Tofu Salad. It turned out pretty well--it tasted a lot like my Peanut Butter Noodles, just in tofu form. Oddly enough, I realized that I had forgotten to add the agave nectar--how unlike me to forget sweetener! Anyway, it tasted yummy just the same. I served the salad with some flax crackers, "carnival" cauliflower, and pineapple.
I didn't get much of a chance to plan dinner tonight, so when I finally returned home, I just slapped together the first thing that came to mind: whole wheat hamburger bun with broccoli, provolone, and sun dried tomatoes, plus a salad with Goddess dressing and an apple. I scarfed this down WAY too fast.

Running in Heels

All I have to say is that I better have killer legs by the end of the semester.

Allow me to explain. Duke has 3 campuses: East, West, and Central to which students are transported via buses. Most of the time, I choose to walk to class from Central campus because it's a mere 10-15 minute walk, and I am far too impatient to wait for buses. However, with the recent dip in temperatures, I have been relying on the bus with far more frequency. Somehow I never seem to get the schedule right though and find myself running to catch the departing vehicle. It wouldn't be such a big deal if I actually wore sensible shoes now and then, but my unhealthy appreciation of heels prevents that from happening...Sexy calves, here I come!

Here's what I've been using to fuel my dashes to the bus stop:

Monday
I made coconut black beans again, which was inspired by this recipe from VegWeb. I obviously didn't have a lot of the ingredients on hand, so improvised. On the side, I had couscous and a salad with cashews.
I had my weekly dining meeting in the evening, so I made a pit stop afterward at the salad bar, where they had...steamed edamame! Clearly, that was the highlight of my day. When I came home, I added some of Annie's Shiitake Vinaigrette and added some crackers and cantaloupe as accompaniments.
The smoothie of the night was another berry bonanza with strawberries, blueberries plus the other usual suspects. Oh, and an extra-large dose of granola:)
Tuesday
Due to the crap-tastic weather we had yesterday (i.e., cold and rainy), I knew I needed a hot breakfast to start out the day. Steamed rice milk poured over crumbled Weetabix and a banana with the scraps of the Sunbutter jar did the trick. PS Why is it that all my nut butters run out at once?! I can't afford to replace them simultaneously!
Yesterday's lunch shall be labeled this post's FOOD FUGUE. It was fan-freaking-tabulous. Here's what spawned the fugue: sweet butter lettuce topped with steamed asparagus, tofu cooked in soy sauce/vinegar/garlic/ginger, cashews, and blood orange segments. I had some of those addicting crackers on the side.
After an afternoon of tutoring, I returned looking for relaxation...so I cooked dinner, of course. I made Lindsay's Spicy Teriyaki Chickpeas. I didn't have any pineapple salsa (again!), so I subbed chopped pineapple. That's couscous, broccoli, and a salad with peanuts on the side.
The smoothie last night was pretty awesome. Let's just face it, I'll love anything with mango it. Here's what went in the blender: frozen mango, frozen peaches, Nutribody protein, and soymilk.
Wednesday
Today's breakfast consisted of a trusty time-saver: overnight oats. Last night I combined oats with rice milk, stevia, and cinnamon; I added warmed & spiced pumpkin and almonds this morning. I had another blood orange on the side.
For those of you who eat overnight oats regularly, do you enjoy it hot or cold? I always assumed it was meant to be consumed cold, but I'm up for a little variety.

As I mentioned above, I have found myself in a sudden nut butter dearth. If you could choose just one nut butter to enjoy forever more, which one would you choose?

The Kindness of Strangers

Have you ever noticed that sometimes the best compliments come from the mouths of complete strangers? My friends and family can praise me to the high heavens, but it often means infinitely more coming from a person with whom I do not have an intimate relationship. Let me explain:

Last week while on one of my many Christmas shopping expeditions, a woman stopped me as I entered the store. She said, "You know, you have gorgeous hair!" This small compliment may seem trivial to many, but to me bore great significance. Before my struggles with anorexia, I had a long, thick mane. Obviously, as my disease progressed my characteristically voluminous hair disappeared. It may seem petty, but losing my hair was one of the most painful parts of my eating disorder; it was a painfully apparent side effect of the damage that I was uncontrollably inflicting upon my body. Thus, to hear a stranger comment on the healthy state of my hair was especially rewarding, even if it has been 3 or 4 years since my recovery. I guess my obsession with avocados and almond butter has benefits besides satisfying my tastebuds:)

Have you ever had a similar experience? Has a stranger ever paid you a particularly flattering or meaningful compliment?

Friday
I was uncertain as to what kind of smoothie I would be able to make with the limited food available in our lake house pantry/freezer. Fortunately, I discovered some frozen strawberries and frozen pineapple--score! I combined them with soymilk and a packet of berry pomegranate hemp protein that I had brought with me. Truly tropical and tasty.
Saturday
Before heading out, I made myself a quick Banana Blender. I didn't have any flaked cereal on hand, so I used my favorite "adult" cereal instead, Kashi GoLean. Fantastic! The finished product had the perfect consistency, close to that of pudding. Yum.
After a run around the neighborhood, I refueled with some Peanut Butter Noodles, to which I added some broccoli slaw. On the side, I had a salad with dried fruit and a drizzle of Annie's Ginger Dressing, as well as some clementines.
For dinner, my family decided to order in Chinese food. I opted for a simple steamed vegetable dish to which I added shelled edamame, cashews, and a sweet agave-mustard sauce. I also had some fresh pineapple (and maybe a fortune cookie...)
The smoothie of the evening featured blueberries. I combined blueberry Spirutein, blueberries, soymilk, and granola. SO fab.
Sunday
I kept breakfast simple but filling, as I was headed to help out with my Mom's Sunday school class. I knew I would be running after 3-year olds all morning! I heated up some almond milk and poured it over crumbled Weetabix; I had a sliced banana with cinnamon-raisin PB.
I scarfed down lunch pretty quick because my family was headed out to see White Christmas at the Alabama Theatre. We have been going every year since I was 11! Anyway, I made a quick Tofurky-avocado wrap with spinach, mushrooms, and whole grain mustard. This was suprisingly delicious! On the side, I had broccoli slaw (dressed with rice wine vinegar, soy sauce, and agave nectar) and peaches.
Pizza night! I never made it to the store for a Boboli crust, so I settled for a whole wheat tortilla. I topped it with pasta sauce (Classico), 'shrooms, bell peppers, and reduced-fat cheese. I had a salad with Woodstock dressing and fresh fruit salad as well.
The smoothie last night took on a tropical note again: pineapple, soymilk, vanilla Spirutein, and coconut.
Monday
I had plans to go to the gym with my sister this morning (due to the newly arrived 20* weather!), so I made an easy but fun breakfast--Banana Fingers. I rolled sliced banana in cinnamon-spiked yogurt and crushed GoLean. That's almond butter on the side for dipping.
Once we returned from our workout and errands, I prepared myself a recipe from Vegetarian Express, the "filet" of tofu with mustard-dill sauce. I substituted agave for honey and vegan mayo for regular--otherwise, I stuck to the recipe (for once!). I also had a salad with walnuts, toast, and clementines.
Urgent question for you all: What should I make for Christmas breakfast and dinner?? I have no idea what to prepare! I would rather not rely on packaged meat alternatives (as I did for Thanksgiving). I was thinking of making a tofu quiche for Christmas morning, and Christmas dinner is entirely undecided. Any and all suggestions are welcome!!
