Adding a Little Color

You all know that I am an adamant proponent of eating by color (especially in oatmeal!), but this love of color also extends to my wardrobe, writing utensils, and, most recently, my decorating. My on-campus apartment boasts a nice shade of blah on the walls, floor, and well, on every square foot of the unit. Although I was sure to add plenty of red pizazz in the kitchen as soon as I moved in (as I spend much of my time there!), my roommate and I had not gotten around to infusing the rest of our apartment with color until...last night. Here is a glance at a few new details on the walls, plus a glimpse at my ever-colorful bedding:
I promise my room at home is much more sophisticated...but I'll save that for another post:) How would you describe your decorating style?

Monday
After I last posted, I prepared a delicious and simple lunch out of tofu, veggies, and a cashew sauce I whipped up. On the side I had couscous and clementines. I swear, things taste better when eaten with chopsticks.
I had a busy evening of unnecessarily long meetings, so I satisfied my aforementioned salad craving with a prepared creation on campus. I opted for one of my faves, the Crunchy Broccoli Salad to which I added chickpeas for protein. (There are walnuts hidden beneath all that glorious broccoli). I also had a fruit cup and some pita. I'll try all your creative ideas ASAP!
The smoothie of the evening was a cherry-berry delight consisting of cherries, strawberries, soymilk, and Nutribody protein. I am running low on granola...suggestions for the next box?
Tuesday
I have an early class on Tuesdays and Thursdays, so I kept the morning meal simple: Fiber One with dried cranberries, and rice milk, plus an apple with cashew butter. Quick tip: Fiber One contains 10% RDA for calcium per half-cup but also contains a small amount of aspartame.
Lunch was a rushed affair, so I just quickly combined spinach, chickpeas, garlic, tahini, and cumin and served it alongside some flatbread and a few clementines.
After a busy afternoon and evening, I relaxed in one of my favorite ways...cooking, of course! I made a simple chili out of TVP, canned diced tomatoes, onions, chili powder, cumin, and ground red pepper. I served this hot pot of goodness with a Rudi's English muffin, a salad with Woodstock dressing, and peaches. This was one of my most enjoyable meals in recent weeks.
The smoothie last night marked the return of my favorite smoothied combo: mango and vanilla! I combined mango, Nutribody protein, soymilk, and topped it with the usual granola. It made my nightly blog reading even more enjoyable:)
Wednesday
This morning's breakfast was a strawberry-banana "waffle tower" as Sarah would say. I topped two waffles with cottage cheese, strawberries, and a broken up Banana Bread Larabar (courtesy of VeggieGirl). Quite delicious, although the banana was not as pronounced as I would have preferred.

I am headed to class now, but I'll leave with you another question to ponder: what's your favorite hot beverage? I just downed a cup of Mighty Leaf orange dulce, and it was pretty amazing.

"It's Not Unusual"...or Is It?

I had a rather "unusual" event happen today while at the gym. I was groovin' away on the treadmill listening to my iPod and simultaneously watching the Rachael Ray Show (one of my fave programs). Today was a big show in that Rachael had invited a special guest, whom she was beyond excited to host on the program: she had invited her teenage heart-throb, Tom Jones. Just as he appeared on stage, what song begins to play on my iPod? (I'll give you a hint: it's in the title of this post). What are the odds of that?!

Anyway, I am getting ever closer to the end. I turned in my two papers today, and I have my final in approximately 36 hours. Based on my calculations, I can get a 78 on the exam and still pull out an A in the course. Sweet.

Monday
The smoothie of the evening featured peaches, mangoes, soymilk, and Nutribody protein. Excellent.
Tuesday
Remember my past infatuation with Weetabix? It's back, but this time I've tried it in a new way: HOT! I poured some scalding rice milk over a few broken up biscuits, then added some nutmeg and agave nectar on top. So warm, so soggy, so sweet--just the way I like it. On the side I had an apple with almond butter.
For lunch, I attempted to revamp leftover lentil soup by converting it into a shepherd's pie. I cooked the lentil soup with some sliced mushrooms until it reduced down to a stew-like consistency. Then I added some garlicky mashed potatoes with dill on top. If I were more ambitious I would have actually baked it in the oven, but I was too hungry for such nonsense. On the side, I had a spinach salad with pom seeds and pecans.
Dinner was inspired by the Broccoli Cashew Teriyaki Tofu Stir-Fry from ED&BV. I used peanuts instead of cashews and changed up the vegetables according to what I had on hand. It was delicious, of course; Dreena never lets me down. I served it alongside some whole grain couscous and an orange.
The shake of the evening was one of my favorite combinations: frozen banana, strawberries, soymilk, chocolate brown rice protein, and special dark cocoa.
Wednesday
I woke up famished today! To fill the void, I decided a protein-y breakfast was best. Scrambled tofu to the rescue! This version featured tahini, soy sauce, ginger, mushrooms, and red onion. I had some toast on the side to soak up the scrambled goodness as well as a sliced apple.
After some intense stat calculation, I broke for a simple lunch. I had a baked potato along with some of Imagine's broccoli soup. I also had some carrots with salsa (a la K) and peaches with pecans and cinnamon. I ended up spooning some of the soup on top of the potato, which ended up being quite a delicious idea.
Hummus pizza was on the menu tonight. I split a pita and smeared each half with a good dose of hummus, then topped them with mushrooms, tomato, basil, oregano, and a few tablespoons of pine nuts. Everything got nice and toasty in the oven. On the side, I had a spinach salad with pom seeds and my homemade lemony sweet dill dressing.
Before I go, I have a quick question for you all: What's your favorite time of day to exercise? My roommate and I discuss this topic a lot, weighing the pros and cons of morning versus evening. I am a morning gal myself, but I was just curious as to what your preferences were and why.

Another Food-fest Complete

Hello again! I hope everyone had a tasty and restful Thanksgiving yesterday. (For those of you outside the US, I hope you enjoyed your Thursday as well!). I began the day as tradition would predict: I watched the Macy's Thanksgiving Day parade with a mug of hot cider. After a bit of lounging, I got around to a bit of exercise and food preparation, of course. There's nothing like having a day to do exactly what you want to do--in my case, cook a fabulous meal and watch Jon & Kate Plus Eight. How did you all spend your Thursday?

Wednesday
Before turning in, I made a quick smoothie with another one of my favorite fruits: cherries! I combined them with soymilk, hemp protein, and PB granola.

Thursday
I kicked off the day with another round of Banana Blender Cereal. This time I used a new cereal for me, Publix's Toasted Oatmeal Flakes; I also used Brazil nuts for the nutty component. I was really bummed that this didn't turn out as well as I had hoped:(



After a morning of parade-watching, exercising, and cranberry-cooking, I made a quick stir-fry for lunch. I made a sauce out of agave nectar, soy sauce, ginger, and garlic and combined it with mango chunks, red bell pepper, mushrooms, tofu, and garlic noodles. Chopped almonds topped it all off, and I served it all alongside a salad with sweet Vidalia dressing that I found in the fridge.


Once mealtime came around, I prepared a last-minute appetizer plate for the crowd: sun-dried tomato hummus with fresh cut veggies and Triscuits with cheese cut-outs.
The big meal consisted of a
Quorn Turk'y Roast with vegetarian gravy, salad, cranberry sauce, steamed broccoli, and stuffing. The salad was a random creation of mine, featuring field greens, currants, and walnuts. The cranberry sauce was another one of my contributions. Although I normally sweeten it with agave nectar, I opted for brown sugar last night to appease all the palates present; other components include vanilla and cinnamon stick.

The stuffing presented a challenge this year: my mom always prepares it from a specific mix, but I happened to notice that this particular mix contained trans fats and high fructose corn syrup. Not cool. Instead, I suggested the Whole Foods brand (see below). Mom was nice enough not only to acquiesce to my request but also to prepare it with vegetable broth (instead of chicken) so that I could enjoy some. Thanks, Mom!
A few hours later, my stomach had deflated enough to enjoy some vegan pumpkin pudding that I had prepared earlier in the day. I adapted it from
CCV's Apple Pie Pudding. Yummy stuff but still second-best to Mom's (non-vegan) version!

I still made room for my smoothie last night. I combined peaches, cinnamon, soymilk, hemp protein, and PB granola.

Friday

I woke up this morning ready for some shopping. I needed plenty of fuel to help me navigate through the crowds, so I prepared a classic tofu scramble with tahini, soy sauce, ginger, turmeric, mushrooms, and red bell peppers. On the side, I had some toast and a sliced kiwi.

We returned home early enough so that I could watch the Duke-Duquesne game on TV. I enjoyed watching another Duke victory while munching on a Turk'y salad wrap, which was comprised of leftover Turk'y, celery, vegan mayo, walnuts, currants, curry powder, mustard, and agave nectar. SO GOOD. Along with it, I had a salad with Clementine segments…and another Clementine.
I don't often share snacks with you all, but I had an exceptionally tasty afternoon snack today: plain yogurt with stevia, cranberry sauce, and raw almonds. So nutritious and delicious! In the spirit of harvest-time coming to an end, I decided to roast an acorn squash for dinner. I seasoned it with herbes de provence and S+P, then stuffed it with leftover stuffing and topped it off with toasted cashews. To round it out, I had some garlic-spiked spinach and cinnamon-y cottage cheese. Doesn't the squash half look a little bit like a heart?
I am off to enjoy a holiday movie, likely Elf or Home Alone. What's your favorite holiday movie?
