The Beauty-Nutrition Connection

Last night, in one of my typical random AIM conversations with my dad, he sent me a link to this recipe: Smoothie for Your Skin. As both you and he are well-aware, I have a special place in my heart for smoothies and shakes, so this recipe quite piqued my interest. Looks like I should add a little flax to my smoothie routine:)

I am a firm believer that nutrition can cure most ills, including matters of physical appearance. As I've mentioned before, a diet rich in healthy fats can do wonders for hair. What foods do you eat that offer beauty benefits?

Perhaps I should take a closer look at my eats for any inadvertent beauty-boosting fare...

Wednesday
Just before heading out to my last few tutoring appointments, I whipped up a quick tofu salad, which I dressed with my homemade sweet dill dressing. I added some pecans and raisins for texture. The whole mess was place atop a bed of greens and accompanied by Corn Thins and kiwi.
That night, I watched a very disappointing Duke basketball game while simultaneously studying for my exam the next day. I also used making dinner as a procrastination tool...where is my motivation? Anyway, I made a grilled cheese with onions and tomato and served it with butternut squash fries, salad with Woodstock dressing, and peaches.
I kept the smoothie relative nutritious that night with blueberries, strawberries, soymilk, and vanilla Spirutein.
Thursday
My 8:30 AM class was cancelled again this week, so I once again seized the opportunity to make a leisurely breakfast. Vegan banana pancakes were on the menu this time, spread with Dark Chocolate Dreams PB. Let's face it. Bananas, chocolate, and PB were meant to be together.
After my exam, I made a simple wrap using a white bean spread from ED&BV which includes cashews and nutritional yeast. I added some spinach and served the wrap with a few peaches.
Then I received an e-mail alerting me of a package at my PO Box. What's this?! I didn't order anything...POM Wonderful!
Does anyone else find these little bottles incredibly appealing? Can't wait to try it--thanks, Janny!

For dinner, I kept it simple and made a pasta salad. I used whole wheat angel hair, sliced mozzarella, chickpeas, tomatoes, steamed asparagus, and carrots, all sprinkled with garlic salt and raspberry vinaigrette.
The shake last night featured strawberries, banana, soymilk, chocolate Spirutein, and dairy-free chocolate chips. Yum.

Friday
I had some leftover butternut squash lying around this morning, so I decided to use it up by making Hungry Girl's Butternut Squash Hash Browns. Basically, the only part of this recipe that tasted reminiscent of hash browns was the ketchup. Bummer. Anyway, I served the squash mess with some scrambled tofu, toast, and kiwi.
By the time I returned from Whole Foods, got my laundry done, and cleaned the apartment, I was famished. I made a quick version of ED&BV's Thai Chick-Un Pizza. I say "quick" because I cheated and used prepared peanut sauce for the base. I also left out a lot of the other suggested toppings, but I was still quite satisfied with just the bell peppers and chickpeas. On the side, I had some more asparagus, mixed greens, and, yes, another dish of peaches.
For dinner this evening, due to my position on the dining committee, I got to evaluate an on-campus eatery (the same one I evaluated here), this time evaluating the delivery service. I ordered steamed veggies with garlic sauce on the side and steamed rice (sadly, brown rice is not an option). I added my own cashews and supplemented the meal with a blood orange. I pulled my usual "prettifying" technique and took everything out of the containers for your viewing pleasure!
My sister and her husband arrive for a weekend visit tomorrow, and I am super-psyched; I love visitors! I think a basketball game and a trip to Trader Joe's may be on the agenda:) Anyway, I'll still try to put together my usual "feature post" on Sunday after their departure. Any topic requests?

Enjoy your weekend!

Run-around Friday

I was busy today! It's amazing how I can have absolutely nothing scheduled, yet I end up filling up the day somehow. I didn't even get to eat lunch until 4 PM! Considering my love of food, that's saying something!

After getting a pedicure, my sister and I went shopping for Mother's Day. We checked out Williams-Sonoma (one of my fave stores), but we decided on a few silver serving pieces from a local gift shop. We even picked out her birthday gift (June 1), so we are ahead of the game. My sister is getting married June 7, so we figured it would be a good idea to get things settled now, before the whirlwind of the wedding starts...

Anyway, I have been busy in the kitchen the past few days; I have been in what I call a "cooking fugue." Without much further ado, here are some of the most recent creations from Caroline's kitchen...

Wednesday
Wednesday night, I made a delicious shake using unsweetened chocolate Spirutein and Soy Delicious fruit-sweetened chocolate vegan ice cream (that was a mouthful!). The vegan ice cream is especially good for creating a "whipped" texture, so this shake was quite voluminous-the way like it. I added some chocolate syrup and a few chocolate sprinkles for fun:)
Thursday
Yesterday morning's breakfast was inspired by Chocolate Covered Vegan and Ruby Red Vegan. I made pumpkin oatmeal pudding, topped with sliced almonds and a squirt of agave. (The recipe you see beside my bowl is Ruby'sPumpkin-Pecan Raisin Pudding).

When lunch rolled around yesterday, I was in the mood for the white bean spread from ED&BV. So that's what I made. I love the combination of cashews, nooch, and white beans. A lovely sliced tomato and crispbreads rounded out the meal. I also had a big grapefruit afterward.

Due to the fact that multiple bloggers highly recommended it, I made the Low-er Fat Banana Muffins from Veganomicon yesterday afternoon. They are a hit! I love seeing the look on my family's faces, mid-bite, that they're vegan. Ha!
While my family feasted on spaghetti and chicken meatballs, I decided to make Veganomicon's bean balls for dinner. I wasn't in the mood for pasta, so I decided to make a beanball sandwich, Oh. my. gosh. Beanballs are definitely entering my regular rotation--'nuff said.
Friday
For breakfast today, I tried something new: scrambled tofu. I used the recipe from the Chicago Diner Cookbook, which called for tofu, sesame seeds, tahini, and soy sauce. True to form, I didn't follow the recipe exactly; I added spinach and mushrooms for good measure:)
My belated lunch today consisted of leftover vegetarian baked beans (Amy's), oat bran pita bread, and an amazing salad. This salad included oranges, sliced almonds, and spinach with a dressing made of agave, red pepper, rice vinegar, and soy sauce. I used a Vegetarian Times recipe as inspiration for this dish. The original recipe required honey, but I used agave, and it also included sesame seeds. I opted to leave those out since I had so much sesame this morning for breakfast. The sweetness of the oranges combined with the saltiness of the soy sauce is phenomenal. I might make a big batch of this dressing for later use.
We are headed to our lake house in an hour or two. I am so excited! I haven't been since last fall, so I am looking forward to being near the water again. We often take long boat trips while we're there, so I'll need to think of some waterside snacks. What would you recommend? I'll probably bring a cooler on board, along with a good book and my shades:) Enjoy your weekend!

Big Bowl Breakfast and Vegan Lunch

Today felt just like spring! It's so exciting to see all the Cherry Blossom and Pear trees in bloom! It was so nice to have the sun shining all day...notice the lovely sunshine in my breakfast photo below. My morning meal was rather haphazard, actually. After I got out of the shower this morning, I was famished! I had no idea what to prepare, and I didn't have the patience to try a recipe, so I made what VeggieGirl refers to as a "bowl meal." In other words, I just dumped whatever looked good into a bowl and dug in. The items that happened to arise in my visual field today were cottage cheese, crumbled Weetabix biscuits, and frozen mixed berries. I topped the scrumptious mountain with a bit of Stevia and cinnamon. Yet again, I have discovered that often the best dishes are those that are completely spontaneous.

Much to my delight, I received my copy of Eat, Drink, and Be Vegan in the mail yesterday. I had been informed that it was on back-order for a few weeks, so I was pleasantly surprised by the arrival of this beloved green book. For lunch today I decided to make the White Bean Spread from the sandwiches section. I was particularly drawn to this recipe because of its inclusion of cashews--after yesterday's lunch I can't get enough of them! This was a really easy recipe to make too: I just dumped all the ingredients into my trusty Magic Bullet Blender and within seconds I had a tasty spread. I put a thick layer on a toasted oat bran pita with some fresh spinach. On the side I had some broccoli slaw (spritzed with Bragg's Liquid Aminos) and the last of the oranges.

Needless to say, I was once again quite satisfied with my dairy-free lunch. I am making a new resolution to try to enjoy at least one vegan meal per day. Both today's and yesterday's mid-day meals were free of animal products, and they were by far the superstar meals of the day. I think I'll be enjoying my lunches a lot more from hereon:) So, to all you vegans out there, or those of you who just happen to enjoy the earth's bounty, please send me your favorite vegan lunch ideas! Enjoy your evening.
