Major Spill

...and no, I am not talking about a cooking accident. I wiped out on the sidewalk yesterday while on my run. These crazy old sidewalks are pretty cracked and uneven. I got scraped up badly on my hands, knees, and my shoulder, of all places. When it happened, two things went through my mind: 1) Is my iPod OK? (sick, I know), and 2) Did anyone see me? Needless to say, I am fine, just a little bruised and bandaged.

Later in the day, I had my anatomy quiz. It was not fun. Nuff said.

As a result of my no good, very bad day, I was looking for a little comfort these past few days. As per usual, I turned to my food!

Thursday
Immediately after my clumsy run, I enjoyed a breakfast of overnight oatmeal. I used instant oats, plain soymilk, and cinnamon; I had a sliced banana with almond butter on the side. As my grandfather would say, "hits the spot!"

Lunch was pretty hurried--I lost track of time while I was reviewing my notes before lab. I whipped up something quick--curried tofu salad (or pseudo-chicken salad). This version consisted of extra-firm tofu, Nayonaise, Grey Poupon mustard, curry powder, raisins, and walnuts. I also gobbled up some
Ak-maks and crudites.
For dinner, I dug up one of my favorite cookbooks: The Imus Ranch Cookbook by Deirdre Imus. My uncle gave me this way back in my earlier days of vegetarianism, and I never really appreciated how great it is until now. I decided to make the Mesa Meatballs, which include soy sausage, thyme, fresh oregano, and a few other flavorings. These were stuffed into an oat bran pita and smothered with tomato sauce. Delicious! I need to use this cookbook more often. I also had some some salad, steamed squash, and a blueberry soy yogurt.
The smoothie of the evening was peaches 'n cream: peach Spirutein, plain soymilk, frozen peaches, and Nature's Path pumpkin granola.
Friday
No fancy breakfast dish this morning: just a whole wheat mini bagel with
Sunbutter and a strawberry-soymilk smoothie.
After running some errands with my mom and sister, I made a quick lunch out of some freezer staples. I decided to make V-con's ever-popular corn and edamame salad--so simple and tasty! I also had a salad of Romaine, roasted red peppers, rice vinegar, and sliced almonds. Mango cubes balanced it all out.
Back by popular demand, some snack pics. Today I had some of Enjoy Life's trail mix and a small dish of plain soy yogurt.
While we were running errands today, my mom and sister stopped at McDonald's for lunch. Although I'm not a fan of the Golden Arches, being there did spark a craving for a cheeseburger. Truthfully, I've never had a real cheeseburger, even in my meat-eating days. Anyway, this craving inspired my dinner: Boca burger on whole wheat with ketchup, vegan cheddar, and Romaine. I also had some a squash-turnip greens saute and a salad with perfectly ripe avocado. Words cannot describe how much I enjoyed this meal:)

Now I'm off to watch an episode of What Not to Wear. Have a good weekend!

Sorry about your running accident, but I'm sure oatmeal solved everything because oatmeal always solves everything!

Om mi gosh! For some reason, I missed the first part of your post-ouch! Hope your not bruised!
I think I am the only person who rarely uses my ipod- but then again, I am not an exercise person.

I am also curious what brand pita you use? I would love to try an oatbrand pita.

What is overnight oatmeal? How much oats do you use? Sounds like it could be a timesaver.

i was wondering what you thought about the soy issue? i eat all forms of soy-- milk (loooove soy milk), yogurt, tofu, edamame, veggie burgers, etc. but i've been hearing from more people about the unknown-ness of consistently eating a lot of soy-- both possible relation to cancer and also it's effects on digestion. hmm,... not sure what to make of it, but was wondering if you had any thoughts on that? :) thanks! do you like your class(es)???

Ouch! Sorry about your spill - don't worry, I've had plenty of falls in front of several people in my lifetime :) And I totally get the concern for your iPod!

Oh gosh I know exactly how you feel about Anatomy...I took 1 & 2 last summer~I did a lot of photocopying- whiting out the names of muscles/bones for little practice tests haha...You'll definitely be glad you took it during the summer to get it over with! You can do it!

I would love to see the cookbooks too! As always, your meals look delicious! :)

Alice: Oatmeal did make me feel better...as always.
Amanda: I like Nature's Own 100% Whole Wheat and Ezekiel bread. Ezekiel is quite expensive and takes up room in the fridge though, so I alternate between the two brands. For pitas I use Toufayan.
Overnight oatmeal is just when I soak oats in soy milk, cinnamon, and dried fruit/nuts overnight. I usually use 1/2 cup oats and 3/4 cup soy milk.
Lacey: I've heard that soy can have detrimental effects too, but as far as I can tell the evidence is inconclusive. There are also many advantages to consuming soy. I choose not to limit it too much because consuming enough kcalories and getting enough variety might be difficult. Plus, I enjoy soy foods, so for now I am happy to continue eating them with an eye on recent research results.
Jenn: Yep, this wasn't my first spill, by any stretch of the imagination...
Allison: These muscles are killing me! But you're right, at least I'm getting it over with.

So sorry to hear about your fall... and then a test! Poor thing, I hope you're feeling better, that food looks like it could brighten any day. By the way, if you can I would love for you to send me some in Ecuador... I'm missing American Vegan/Vegetarian food :(

Oh no! I hope you're all healed up by now. Whenever I trip or almost fall I actually think it's funny if other people see me cause then they can have a little laugh at my expense. Maybe not if it was a total wipe out though!

The curry tofu mix sounds like a perfect last minute meal. And the veggie burger! Yum. I love to put a patty on toast with all the fixings, it definitely fulfills that craving.

And I say go for a cookbook listing, it's always interesting to see what other people have and could be a good resource for any new veggies that come accross your site.
