Speedy Post

Hello all--I am taking a quick break from studying muscles (of which there are WAY too many) to post a few pictures. The commentary will be brief...a rare occurrence on this blog!

Monday
The shake of the evening was a winner: Chocolate and Chocolate Peanut Butter So Delicious, Cookies N Cream Spirutein, and Silk soymilk. Heaven in liquid form.
Tuesday
Another tofu scramble, but this time without the tahini. I added some vegan cheddar and sliced mushrooms as well. A whole wheat mini bagel and an orange rounded it all out.

Lunch after class consisted of jarred pasta sauce (Classico brand), farmers' market squash, Gimme Lean sausage, and pasta, all mixed up in a delicious mound. I had some trail mix for "dessert;" there were raw almonds and Craisins.
Since a few of you have asked that I post pictures of my snacks, here is just one example: Oikos Greek yogurt with blueberries and carrots dipped in hummus.
Dinner was whipped up in about 5 minutes--whole wheat couscous, kidney beans, garlic, broccoli, and minced onion. I also had the obligatory side salad, plus an unpictured banana with PB.
For my shake, I combined whole frozen strawberries, strawberry Spirutein, plain soy yogurt, and Nature's Path Pomegranate granola.
Wednesday
I enjoyed a lovely breakfast outside this morning--it was unusually mild today. I had Quaker Multigrain cereal with a half banana mixed in, plus a Nutiva chocolate hemp shake made with almond milk and the other half banana.
Just before heading to class this afternoon, I made a tofu/hummus wrap (using two flavors of hummus!) on a whole grain tortilla. I also had a Greek salad with Romaine, roasted red pepper, Kalamata olives, and balsamic vinegar. The sliced apple satisfied my sweet tooth.
For dinner I made a strange ratatouille out of leftover hearty tomato soup, zucchini, and leftover chickpeas/fava beans. I dipped whole grain bread in this delicious dish, and I had some mixed berries too.

Everything looks amazingly good. I really like the sounds of that 'strange' ratatouille you threw together. Sounds like a good combination of foods!

Your food looks great as always. I was wondering as a fellow nutrition student and eating habits simalar to you, how do you go about planning your meals, do you plan ahead in the week, cause it often gets hard with school/work etc.
DO you aim to have each food group at each meal?

Lighter Portions: The ratatouille IS good--I liked the extra flavor that the tomato soup added.
Christie: Sometimes I plan ahead, sometimes I don't. Lately what I have been doing is using Clean Eating Magazine--in every issue there is a 30 day meal planner. I don't follow it to a T by any means, but it's good for ideas when I don't have the time to think of a menu. I don't aim for all of the food groups in every meal but rather 3 or 4. I fill in on the missing food groups in my snacks.

I have two questions. I love love your long posts and look forward to seeing your new ones. I was wondering though if there are certain days you post or if it is just random.

Also, it was great seeing one of your snacks. What are other typical snack combos of yours? I keep grabing processed snacks, which I would like to avoid doing so I need some new ideas! Thanks!

I don't want to assume anything, but that "pasta" you mention in your post looks like it is really those low-calorie shirataki noodles. Why don't you just call it what it is?

And as a recovering anorexic, is it really healthy for you to be buying that stuff (and then telling your readers it is pasta)?

Looks like pasta to me. I could be wrong though, maybe Caroline is trying to decieve us all...

The first shake is obviously so good that it is shining with deliciousness, like there are little diamonds in it. Yummy-looking meals, especially the scramble and ratatouille. I love the whole wheat mini bagels too, all the bagel greatness with less of the bagel calories.

VeggieGirl: Yep, food photography always seems to make me feel better...is that weird?
Alice: The tofu scramble has fast become one of my "go-to" meals, meaning that it tastes good every time, and it's easy!
Love of Oats: Eating outside DOES make things taste better! Sometimes ambiance is everything.
Katie: I typically post every Monday, Wednesday, Friday.
My snacks usually consist of nuts, fruit (fresh or dried), and sometimes dairy. I'll try to remember to post some more snack photos in the future.
CCV: I didn't try a tofu scramble until this summer, and now I am totally hooked! It made cutting out eggs really easy.
Anonymous: Actually, those are not Shirataki noodles, just regular fettuccini. My only sin with these noodles is that they're white pasta, not whole grain. Thanks for the apology...just FYI, I am not truly in recovery mode anymore; my eating disorder was really at its peak over 4 years ago.
Erin: Haha, I think the glistening might be due to a dying camera battery, but we can just say it's glistening with greatness...Mini bagels are great, but it takes me forever to finish a whole bag of them!

The shake you started your post with sounds wonderful! I've always wanted to try making a shake with vegan ice cream, but somehow the ice cream never makes it into the blender. Eating it with a spoon is so much fun! Your Nutiva hemp shake sounds tempting as well. I've been making soymilk & frozen fruit smoothies every day for the past couple of weeks for part of my breakfast, so I'll have to start leaning on you for some flavor inspirations!

You reminded me that I need to try making ratatouille - you just post so many yummy creations! I hope anatomy is going well for you, too; my sister took that class last semester and she said it was unbelievably hard. She had she had to study every single day for it or risk failing the class!

Ruby: I should actually try eating the ice cream with a spoon one of these days...Maybe I'll have a bowl of that rather than a shake one of these nights.
Morning smoothies are the best. Surprisingly enough, they keep me full forever!
Anatomy is definitely one of those classes that you have to keep up with, especially in the summer when it is so condensed. Ugh.

I have to agree with anonymous that those noodles look eerily like shirataki... so now I'm really curious to know what brand of pasta you used?
