Wedding Day!

Hello all! I just had finished getting my hair done (I'll post pics next time), so I have some time to kill before heading to the church for pictures. I have had so much fun in the past few days! As soon as I got out of my (4-hour) anatomy lab on Thursday, I've been mingling with family and friends non-stop. I got a chance to talk to my grandmother (the dietitian), and we had a good conversation about the importance of nutrition in everyday health. I am such a health dork!

Here's what I've been chewing lately:

Wednesday

I made an excellent smoothie out of frozen cherries, cherry Spirutein, nonfat organic plain yogurt, and granola (of course). I found that increasing the amount of frozen fruit and decreasing the amount of yogurt makes my smoothies even tastier!
Thursday
After a quick run and a shower, I needed a lickety-split breakfast before heading to my 10 AM class. I settled on a simple bowl of Kashi GoLean with almond milk and some plain soy yogurt with fresh blueberries.
I packed my lunch to enjoy between classes. I ended up eating it outside on a bench while on campus. Great way to eat a meal! I packed an almond butter sandwich on whole wheat, roasted soy nuts, crudites, and a small apple. Don't you just love the lunch containers?! The bag that they go in is mocha/Carribbean blue.

For dinner we had a few relatives over for Stouffer's lasagna and salad. I decided to make a variation by combining tofu, broccoli, Classico pasta sauce, garlic, basil, and whole wheat rotini.
The shake for the evening consisted of banana, banana Spirutein, and peanut butter.
Friday
Before my run yesterday, I noticed a gorgeous bowl of cherries sitting on the counter--I just had to take a picture! Having a blog is makes me notice beautiful food now...Anyway, for breakfast I had some of those cherries along with some of that multigrain hot cereal and sliced almonds. I added a dash of cinnamon too.
We had a bridesmaid's luncheon yesterday at which they served chicken salad, fruit, quesadillas, and ice cream. Luckily, the chicken salad was served in an avocado half, so I ate most of that and the fruit. I was still hungry when I came home so I made a hummus sandwich with a slab of tofu too and a big spinach salad.
We had the rehearsal dinner last night, and I had a baked potato with various veggies. I had an emergency Clif Nectar bar that I ate halfway through the evening. The other offerings were steak and shrimp, if you're curious. Sorry no pics!


I will try to take some pictures of the copious amounts of food at the reception tonight. I'll leave you with a picture of my sisters and me with a few relatives at the luncheon yesterday.

Mmm I'm feeling your shakes! I always go back to my old stand-by.. pumpkin!! I did make a really yummy white peach/mango soy yogurt/vanilla protein one the other day though..

I want to see pictures of the hair!

Cute lunch containers, for sure - but I'm loving the CONTENTS of the lunch containers even more!! Yum!! :0)

You're right, those cherries are gorgeous! Your tofu lasagna looks awesome as well. Yummy! I made a seitan parmesan wrap for my lunch today and now the idea of vegan Italian food is just making me hungry...

Hope you are having fun at the wedding! It must be so exciting!

What is so special about the magic bullet versus a blender. I know you really love it.

Also, have you ever put pb in a smoothie. It seems like with milk and banana the pb taste would kinda get lost with all the other flavors.

Last, why do you eat wheat germ. I am new to health food.

If you don't mind I have one other type of question. What type of avocados do you buy? When I went to the grocery store there are alot of diff types! What made you want to like avocados so much?

RunRoamRecycle: Mmm your shake sounds delish! I have just recently discovered the wonders of mango.
I will def post a picture of my hair ASAP!
VeggieGirl: My packed lunch was totally spur of the moment--I realized that I needed to put something together at about 11 PM the night before!
Ruby: I am quite obsessed with my cherry picture at the moment--I have it as my desktop pic because it is just so summery:)
Oh, and that seitan parmesan wrap sounds amazing!
Nadia: I like the MB because it compact and thus doesn't take up much counterspace. Plus, it's pretty powerful with minimal cleanup.
I find that peanut butter can shine through in smoothies, as long as you don't overload them with strong flavors or too much ice.
Mostly I eat wheat germ because of the texture--crunchy and toasted. It's also a good source of vitamin E.
Anonymous: The brand name of the Thin Cakes is Suzie's. I've seen them at my local grocery store, Whole Foods, and health food stores.
Foodfashionlife: Pics will be up ASAP!
Lauren: I buy Hass avocados--they're the smaller, less-green ones. I used to be turned off by avocados' creaminess. I thought that creamy and vegetable didn't go together. Now, I have come to appreciate the creamy moisture they lend to sandwiches and wraps. Plus, they're a great source of monounsaturated fats.

That's really awesome that your grandmother is a dietitian! I bet she has a lot of good things to say ;)

To answer your question, yes that is from Target. Isn't it a cool place mat? I saw it and knew it needed to be added to my collection :)

What brand of salsa do you use? I love freshly made salsa (the type with tomato pieces not cooked), but I hate chopping. Any suggestions?

Hi, I love your blog and have a few questions, although I am sure you are quite busy with the wedding, so don't worry about responding until you have time. I am very new to cooking so that will explain some of my questions.

1. How do you satee your veggies. What type of pan? Do you use oil or spray?
2. what type of salad dressing do you use? i can't tell if you use any? If not how do you enjoy the taste of plain greens it seems like it wouldn't taste good.
3. since you eat so much salad! How do you time manage buying and cleaning the lettuce. Cutting and cleaning one head takes forever for me! I imagine you go through a head a day. Any tips? thanks and hope you had a good weekend!

Eric: Yep, she has some cool things to say! She reads the blog too!
Amy: I really like Cedarlane salsa, but most of the time I just buy the healthiest and cheapest brand. I have tried making my own fresh salsa before, but it ended up more like gazpacho!
Meles:
1. I use a small (8-inch?) skillet and canola oil spray to saute veggies.
2. I put balsamic vinegar, red wine vinegar, and other light dressings into a small spray bottle called a Misto. However, sometimes I use salsa, or if the toppings are juicy enough, I use no dressing at all.
3. I really never thought I ate that much salad, but I guess I am just used to my Mom making a salad for dinner every night while I was growing up. I probably go through 1 head of lettuce per week; if I buy one of those large plastic containers of organic greens from Sam's, it usually lasts 2 weeks. It doesn't take much time to quickly rinse a few large lettuce leaves under the faucet. I love salad so much that I don't mind the little bit of chopping that it requires. You don't have to use a bunch of differenct ingredients to make a salad: try just using lettuce, and two other veggies. It doesn't have to be fancy!
