Luxurious Friday

I can't believe it's already Friday--where did the week go?? Even though I am a little sad that my spring break is coming to an end, I spent today feeling like a goddess. Not only was my food scrumptious, but I also had a bit of a "spa" day. This morning I stocked up on the only lip gloss I wear (besides Chapstick), and later I went to the nail salon for a pedicure with my mom and sister. I do not normally spend my days participating in such uber-girly activities, but it was a great way to relax.



To start off my day of luxury, I decided to make myself vegan French toast. I didn't use a recipe, which was a mistake in retrospect. The bread didn't really "set up" correctly, so the slices were a tad mushy--perhaps I used too much almond milk? Nonetheless, it was a tasty dish. I spread the toast with homemade pumpkin butter; on the side was mixed berries with wheat germ.













After stocking up on beauty supplies and a quick Target run (OK, maybe not so quick), I returned to the homefront for lunch. I used up our somewhat mushy avocado and some leftover smoked tempeh to make a quasi-BLT, even though I used spinach instead of lettuce and tempeh instead of bacon. At least I got the tomato part right. Since I used up so much of our loaf of bread this morning for breakfast, I decided to make it into a wrap. I had this with some broccoli slaw and natural applesauce.





My free-form tofu/squash shepherd's pie that I had for dinner tonight didn't turn out exactly as planned, so I'll post a picture of last night's dinner instead. I made a pseudo-chicken salad with seitan and tofu; with a dollop of Nayonaise and a few chopped walnuts, it turned out pretty tasty. I enjoyed it atop an open-faced whole wheat hamburger bun.





Yet another vegan meal! Actually, come to think of it, all the meals I posted today were vegan...maybe cutting out dairy wouldn't be so hard after all...


Even though this is a food blog, I hope it won't turn your stomach too much if I leave you with a picture of my lovely feet, post-pedicure. Enjoy your weekend!

pretty toe nails!!! i cant wait for warmer weather here in boston so i can wear flipflops too :D love the blog! have you been meatless for a long time? do you think you'll ever "go vegan"?

How do you make your pumpkin butter? I got it one time from Trader Joes, but its a lot of sugar and would love to make my own.

Im from Boston too, and next year am going to school over in the Fenway...what are your fav places to eat in Boston, for vegetarian food? Ive gotten a couple rec. from others, but just wondering your opinion.

veggie planet in harvard square i LOVE! they have great vegan pizzas... other than that i don't know too many great places around here, i'd love to find out some though. i mainly do my own grocery shopping rather than eating out a lot.

Andrea: I love the warmer weather too! I actually almost went to college in Boston too; I was VERY close to going to Wellesley. Where do you go to school? I have been meatless for about 4 years, so I am contemplating making the vegan plunge. However, it would be near impossible on my college campus, so I think I will put it off at least until summer.
Anonymous: my pumpkin butter is super-easy. It's not really even a recipe. I just mix plain canned pumpkin with either Stevia or pure maple syrup and my favorite spices (cinnamon, nutmeg, cloves, etc.). I love the premade ones too (especially Williams Sonoma's maple pecan version!), but I agree that they have way too much sugar.

i know what you mean! going vegan is something i'm definitely interested in too - i've been meatless for 6 months now - but it might be more realistic once i'm living on my own (scary thought lol). i'm a sophomore at Boston College (love it here); Wellesley is a GREAT school too!
